For the best pancakes, what temperature should the water be?
For light, fluffy pancakes and tender waffles, we recommend cold tap water (55°F-60°F).
Can I overmix the pancake and waffle batter?
Mix the batter just long enough to moisten all the dry ingredients. Some batters will have lumps. Overmixing the batter will cause the pancakes or waffles to lose volume and become gummy and chewy.
Can the pancake and waffle batter be made in advance?
Ideally, it is best to mix the batter and use it. Prepared batter can be covered and stored in the refrigerator for up to 12 hours. Batters that sit too long can produce pancakes and waffles that are tough with low volume.
How can I tell when the griddle is ready?
Pancakes should always be cooked on a preheated, hot griddle set to 375°F. If using a standard stovetop, set temperature to medium heat. Test the heat by dropping a pinch of water onto the griddle. If the griddle is ready, the water will sizzle and evaporate in a few seconds. If the griddle is too hot, the pancakes will dry out around the edges before you turn them over and the surface will be too dark. If the griddle is too cold, the pancakes may stick to the griddle and will have a pale surface with a wet interior texture and low volume.
The pancake and waffle batter thickens over time, what can I do?
If the batter becomes too thick, stir with a wire whip or add a small amount of water and stir.
What can I do to prevent my pancakes from sticking to the griddle?
Start with a fully preheated, clean pan or griddle. Uncleaned surfaces or too low temperature can cause sticking. Once the griddle is the proper temperature, brush it with a thin layer of vegetable oil. Do not use butter or margarine. They can cause the pancakes to burn on the outside and still be raw on the inside.
What can I do to prevent my waffles from pulling apart?
When cooking waffles, lightly grease your waffle iron. The all-purpose cooking sprays are ideal. If your waffles are pulling apart when you open the lid, double check waffle iron temperature and cooking time to make sure the waffle iron is set properly and waffles are cooked through.
What can I do to make the same size pancakes every time?
Using a measuring cup, ladle or ice cream scoop to portion the batter takes out all the guess work. Use slightly less than 1/4 cup batter to make a 4-inch pancake.
How can I tell when my pancakes are done cooking?
Watching the timer and cooking them 1 - 1 1/4 minutes on each side is the most accurate method of getting consistent results. Visually you will notice the pancakes will have many surface bubbles and edges will begin to dry slightly. Do not flip pancakes more than once or pat down with spatula. This will cause the pancakes to lose volume and become tough.
Can I add other ingredients to either the pancake or waffle batter?

Can I freeze the extra cooked pancakes or waffles?
Yes, they will freeze nicely for up to 3 months in a sealed, airtight container. It will be easier to remove the individual pieces if you separate each layer with foil or wax paper before freezing. To reheat pancakes, place on a baking sheet, cover tightly with foil and bake at 350°F 5-10 minutes or microwave in stacks of three for 1 1/2 - 2 minutes. To reheat waffles, toast one cycle in preheated toaster on medium setting or bake uncovered at 350ºF 5-10 minutes.
What is the shelf life of Snoqualmie Falls Lodge® mixes and how should I store them?
The key is proper storage. We recommend storing flour mixes and cereal in a cool (70°F or below), dry environment. It is best to use the oatmeal within a 12 month period. It is best to use the pancake mixes within a 24 month period. The mixes do not contain any perishable ingredients.
