Pumpkin Spice Quick Bread Mix
Pumpkin Swirl Cake
Cake: 1, 15 oz package Krusteaz Pumpkin Spice Quick Bread Mix 1/2 cup water 1/3 cup vegetable oil 2 eggs Swirl: 8 oz (1 cup) cream cheese, softened 1 egg 1/4 cup sugar 1 teaspoon vanilla vanilla glaze (optional) Preheat oven to 350°F. For Cake: In medium bowl, blend together Krusteaz Pumpkin Spice Quick Bread Mix, water, oil and 2 eggs. Spoon batter into a lightly greased 13x9x2-inch pan. Set aside. For Swirl: Place cream cheese in separate bowl. Using an electric mixer, mix on low speed for 1 minute. Add 1 egg, sugar and vanilla. Continue to mix on low speed for 1 minute or until smooth. Spoon cream cheese mixture randomly over pumpkin batter. Swirl with a knife in the shape of large circles. Bake 25-30 minutes or until toothpick inserted into center comes out clean. Drizzle with vanilla glaze, if desired. For Vanilla Glaze: Whisk together 3/4 cup powdered sugar, 1 tablespoon water and 1 teaspoon vanilla until smooth. Makes 15 servings.
