Ice Cream Sandwich Cookies

Prepare and bake 1, 20 oz package or pouch Ghirardelli Chocolate Chip Cookie Mix as directed. Cool. For each sandwich, place 1/4 cup ice cream between two cookies. Dip sides of ice cream sandwiches in sprinkles, finely chopped pecans or coconut, if desired. Keep frozen until ready to serve.
